if I was to do this with a carp instead of a rainbow trout what lustre sprays and colours would I use.. and where can I buy scale embossers?

There are other ways of making scales, the technique shown by Paul is the easiest and quickest.
You could use a texture mat, to see mats google ‘fish scale texture mat’.
Use any lustres brands you like as long as they are edible. Mix and shade lightly to achieve best results, not forgetting to look a pictures of the real thing for colours.
