choc, fruit, sponge wedding cake
Hi
I am making my sisters wedding cake and they want one tier chocolate sponge, one carrot cake, one lemon sponge and a small top tier fruit. I need to have this finished ready to take with me down south on Wednesday but the wedding isn’t until Saturday. What is the earliest i can make each cake and cover in fondant? Thanks in advance 🙂

Most cakes, apart from fruit cake, have a shelf life of approximately five days. Madeira cake, depending on recipe can last as long as two weeks from baking to eating. Fruit cakes can be baked three months in advance, wrapped and left to mature until required. Some chocolate mud cakes, depending on recipe will stay fresh for seven days. Carrot and lemon sponge should really be served within three to five days for freshness. There is a lot of information on the site about advance baking which you may find useful. There is also some information on extending the shelf life of cake by using a little glycerine. Please see David’s answer here:
