Fruit cake shelf life

Hi all,
I recently made a fruit cake around 3 weeks ago and it has been iced and marzipan end for 2 weeks now. It was not cut into during a party and is now stored in a cake box.
Please could I have advice on how long the cake will keep in a marzipaned and iced state as my grandma wants to keep it til christmas. Last thing I want is having spent so much on ingredients and we cut into it in December and its mouldy!

HI Natalie

It depends which type of fruit cake it is. If it’s a light fruit cake it won’t keep until Christmas. Normally a fruit cake which is left to mature contains much more fruit than flour, more like Christmas cake recipes.
To store a rich fruit cake wrap it up in parchment and foil and place it in an air tight tin then store in a cool environment. Every couple weeks feed it with some alcohol which will keep it moist and extend it’s keeping properities You can also freeze it but it’s not necessary. Fruit cakes can be matured for months and if stored properly can be kept for years. For more information have a look here:

I’ve still got one of my fruit cakes from last year. I soak my fruit for months on end and then mature the cake for three months or more if not eaten. You can see how I prepare mine here:

Thank you very much. My cake is already iced and marzipaned so needed to know storage/ shelf life for a cake that is already covered?
My recipe is from little Venice cake company, they mention it can be stored up to 6 months at room temp if already iced but just wanted other people’s thoughts/ experiences as I have heard conflicting opinions.

Yes that’s fine, the cake will continue to mature under the marzipan and icing. It will also be protected from the environment.
