Could you tell me how long will a gauche or buttercream cake covered in fondant will last out of the fridge.
how far in advance can you make a fondant covered cake?

It really depends on which cake recipe you’re using. A normal sponge will last for approx 5 days from baking to eating, madeira cake two weeks and some chocolate mud cakes for anything between 5-10 days depending on recipe again.
