Would it be possible to make models in advance
Hi Alicain
It’s always a good idea to make models up a few weeks in advance to allow them plenty of time to dry. Once made let them dry in a well ventilated area. Store models and flowers in cardboard boxes and not in airtight plastic boxes which will make them sweat and wilt.

Sorry models against the cake
Seems I misunderstood your question. The models against the cake can be made up in advance. What you’d need to do is make them up against a dummy cake or the cake tin the same size that your cake is going to be. This is so the dimensions will be right for the real cake. Wrap a strip of parchment paper the same size diametre as the dummy or tin and make the model against that. Once dry you should be able to lift it off and place it against the cake securing it with royal icing. Please let me know if this is what you had in mind. x
