How many day ahead can I prepare a naked cake , I have to make a cake for a wedding on a Saturday and I leave also for a weeding on that day, can I flowers already on the cake or will the buttercream distory them?

For tip top freshness, naked cakes should really be prepared on the day of requirement. Unfortunately the sponge can become very dry if left exposed to the air. If you’d like to take a small risk, what you can do is prepare the cake the night before by brushing simple syrup over both sides of each layer before filling. If you have a spray bottle, fill it with simple syrup and give the whole cake a misting. The sponge will soak up the syrup and stay moist. Finally cover the cake up with heavy duty cling film and keep in a very cool place away from windows or direct heat. The flowers will have to be added later because the butter will certainly soften some if not all of the flowers. Are they wired flowers or stick on? In either case, you can ready position the flower picks in the cake for easy insertion of the flowers on the actual day or if stick on, take with you some royal icing to use as glue. Are you a guest at this wedding or going else where? If you are not at the same wedding it will be necessary to let the bride know that the flowers will have to be placed later by her wedding planner or venue staff. Or, if she is happy to take the risk of you placing them in position at the time of delivery.
Supermarkets don’t stock heavy duty cling film but it can be bought online, just google ‘heavy duty cling film’
and for spray bottles, somewhere like Wilkinson’s or the Range (if you are based in the UK) or possibly some supermarkets. Please don’t use empty clean spray bottles which have contained chemical cleaners.
