Rose Gold food colouring

Hi everyone, Happy New Year! I’ve been asked to make some macarons & they need to be a rose gold colour & I wondered if anyone can advise me on a colour to buy or how to achieve it by mixing different colours together….

Hi Louise

A very Happy New Year to you too. Have a look at the following pearl rose gold lustre dust.

I should think a neutral base colour for the macarons would work well with the lustre.

I’m not quite sure how you are intending to use the gel colour, are you going to add it to the macaron batter to colour it? What I’m suggesting is making the macarons in a neutral colour and dusting them with the lustre with a soft round brush. Alternatively if the lustre is mixed with either vodka or isoprpanol it can be used for painting the macarons. Please let me know if I have understood correctly.

To achieve a rose gold for the batter try experimenting with a little bronze and pink. You can use the bronze lustre and pink and add it directly into the batter or preferably mix it with first with a little of the batter as a temper so you don’t lose the consistency by over beating. Make the colour slightly darker than required to take into account loss of colour during baking. Please experiment first, I wouldn’t want you to spoil a whole batch of batter.

In my answer above, I have made a suggestion to experiment with a little bronze and pink to achieve rose gold. However, the colour can be purchased from cake decorating stores.
