Sugarpaste and marzipan – how much?

Hello

Does anybody have a reliable quantity guide for how much sugarpaste and marzipan to use for different cake sizes?
I have several and they all seem to be different!

Hello Annie

It really depends on the thickness you roll out to. All the quantites in books and on the internet are there just to serve as guides. What I do is take a guide quantity. After covering the cake I weigh the excess which gives me a my own guide for how much I’ve actually used. Here’s another answer here:

For Paul’s tutorials the quantity of sugarpaste is always listed under the ingredients tab.

For sugarpaste, quantities can also be dependant on the brand. For instance Satin ic and Carmas Massa pastes roll out far thinner than eg Renshaw. Some brands will have their own quantites chart wich can be found by googling it.

After a while you won’t need guides, you’ll naturally eyeball the amount you need but it’s a good idea to keep your own log book for different cake shapes, sizes and novelty so you have a quick reference.
