Vegan Madeira Cake Recipe

Hi, just wondered if any one can help me. I’m making the cake for my daughters wedding on August 5th. I’m not a professional cake maker, I just bake half decent cakes for the family. Both my daughter and her boyfriend are vegan . My problem is not only do they want unusual flavours – a tier each of Rose, Lavender and Elderflower, but it has to be vegan as well. On top of that my health is not too good, so I wanted to make as much in advance as possible. My original plan was to make Madeira cakes and flavour them as required and freeze them, then simply decorate with fondant a couple of days before the wedding and sugar paste flowers made in advance. But, I can’t find a suitable vegan cake recipe, I had wondered if I could just use my normal Madeira recipe and just replace the eggs with the boxed egg substitute and butter with vegan margarine or is there tried and tested vegan recipe out there? Advice will be gratefully received.

You certainly could use your normal recipe and make the substitues as required.
I’ve heard several people recommend the Tesco maderia vegan recipe, perhaps try it? The rose and lavender flavours are very strong, this would give you an opportunity to test them out and adjust amounts.

I’m sorry to read that your health is not so good. It will be a lot of work for you. As you have already mentioned, the cakes can be made ahead and frozen. It’s a good idea to plan in advance to make life easier later. if you froze the Teco cake recipe, it would be a good experiment to test it’s integrity after defrosting. Testing now will enable you to proceed with confidence in the knowledge, that the cakes are of good quality. It might be an idea to ask your daughter to help you with the testing and flavouring. Any help will ease the burden on you so that you too can relax and enjoy the big day.

Thanks so much for this info madeitwithlove . I was just about to go and have a trial with my normal recipe and the flavours. But I think I’ll pop one in using the Tesco recipe too. Once again many thanks your help is invaluable.
