Hi Sandra

It’s best to leave the icing to dry overnight before stacking. However, place all the dowelss in before the icing dries to prevent cracking when the dowel are pushed in.

I do the same as MIWL, insert dowels as soon as it’s iced. If I’m taking it to the venue ready stacked I do it the evening before delivery to allow the royal icing between tiers time to set/dry out a little. Anything over 3 tiers gets stacked at the venue (unless the design dictates otherwise and then I add in the sturdy cake stackers system which provides a centre dowel/additional stability for transport).

When to stack can also depend on the type of cakes being used and on how complicated the design is. If the decorations have to be assembled, painted or piped on an already stacked cake, it may be worth starting a couple of days in advance to allow time for finishing and settling. When I was doing wedding cakes I would stack at the venue. I haven’t used stacking systems and can’t say how good they are, I’m also not strong enough to haul stacked cakes. However, I’ve seen cake stackers, looks like a good system. The people who have designed it are lovely and helpful which is an extra bonus! The product has really taken off, so pleased for them.
