This design takes a lot of cake and it’s important that you get the stacking right. Watch Ben take the cakes, cut, ganache and stack them ignoring any finesse, which will come later.

3. Carving the shape

This is time consuming and can be intricate but it’s so important to take your time carving off small pieces at a time. Ben talks you through the process with some great advice about how to ensure the key features are clearly shaped and showing.

As it’s very hot during filming so Ben then covers the cake with a layer of chocolate, but ganache will do if you are in a cool studio.

4. Smoothing the cake

Whether you have used chocolate or ganache you’ll need to smooth the cake. Ben uses a knife to remove the sharp chocolate edges then uses his trusted steamer to get a smooth finish before covering the body with a thin layer of sugarpaste.

5. Adding the facial structure

This is where the face starts to take shape by adding the protruding features. Ben moulds the pieces into the shapes to give skull definition. Remember this will all be covered later so it doesn’t need to be too neat at this stage.

6. Covering the face

Now that the features are in place it’s time to cover the head, being careful to massage the sugarpaste to show the key features. It’s certainly worth taking your time at this stage to get all the details that Ben adds as they will all come to life when the airbrushing starts.

8. Airbrushing

Ben starts with getting skin tone base layers added. The key thing here is to have the patience to build the layers slowly and don’t look to go for an all over covering.
