I don’t think I would freeze them, they’re so tiny and would probably taste dry on defrosting or soon after. You could make them the day before, allow them to cool completely and store them in a cardboard box. Freshly baked would be even better! I don’t have a lot of luck with cupcakes let alone mini ones unless I add a little jam or curd in the batter prior to baking to keep them moist. Hope other members will advise. x

Hi Annescakes1. I have started to use the Mrs Jones recipe, which is fab! I do mine the day before but cover them straight away with buttercream and sugar paste before storing boxed, in a cool room. They have always been fine 🙂 x
