It depends what sort of cake it is. A fruit cake will last for months providing you keep it covered up from external conditions. Madeira sponge will probably start to stale after about a week or two, and certainly the less dense cakes will deteriorate sooner. Reduced sugar jams will mold and fillings which contain part dairy eg buttercream with cream cheese will definitely start to break down after week. Other members may have different experiences, this is mine. My best sponge cake results have been with madeira, and chocolate mud cakes filled with ganache which have lasted a good two weeks. I have a very cold kitchen and it does make a big difference from storing in a warm room. What had you in mind?

Hi madeitwithlove 202 thanks for your tips l make cakes for charity and friends and was wondering if it would be alright to make the cakes a couple of days before so that l am not rushing,l do have a job as well but l just love making cakes ang cupcakes only stated making them a few weeks a go ,had a go at
pauls handbag cake yesterday ,

It will be fine to make the cakes a couple of days ahead, you have plenty of time, just make sure they are completely cool before decorating them, then store them in boxes, (not in plastic they may sweat). Back in September I made loads of cupcakes and fancies for the World Coffee Morning. Our charity was MacMillan Nurses. I made all the cakes two days ahead and decorated. On the day there were quite a few left and they were all auctioned off the next day. The cakes were all fine, everyone commented on how good they tasted. So from my experience, nothing will go wrong with yours. I’m not on face book, will I still be able to view it? I’ll have a look any way. I prefer doing large cakes, they have a longer life expectancy and much easier to decorate. If you need more help please ask. xx G’d luck with your fund raising, hope all goes well. xx
