I usually leave out the sultanas for people who don’t like them and just replace the weight either with more carrots or nuts. Carrot cake is very forgiving and not an awful lot can go wrong with it. I do have a fatless, no sultana carrot cake recipe which uses ground almonds, whisked eggs, coconut, walnuts or your choice and grated lemon or orange peel. The recipe is for 10″ cake but can easily be scaled down. If you’d like to try it for taste, I’ll post for you.

I used sams carrot cake online it has raisins,I forgot the sugar and flooded it with sugar syrup everyone said it was the best cake they’d tasted.I may have to leave out the sugar permanently
