Chocalate cake with ganache

How long would anyone recommend a non cut chocolate cake with ganache would last, i have a customer who collected on saturday for her sons party on sunday, but unfortunately he woke up ill on the sunday and had to cancel his party. She wants to keep it for this sunday, one week (note we baked it on thursday)

It depends on the recipe. Paul’s recipe has a recommended shelf life of 5 days but from a similar scenario I was informed the cake was good even after 10 days. Since your cake is uncut, sealed from air I can’t see why it shouldn’t be fine. I’ve had unused ganache out of the fridge for several days and it’s been fine. Just ask your customer to keep the cake in a cool place. If the cake has been iced with sugarpaste I wouldn’t recommend placing it in the fridge. The icing is affected by moisture and begins to break down into a gooey mess.
