coloured fondant

Hi madewithlove,

I have just looked at your receipe for fondant, do you mix in paste or powder to colour and when?

Hi Jenny

I mix colour before adding the icing sugar, it disperses better and stops any streaks. I prefer to use gel colours because you get better control on how much to use, but you can use paste. I avoid powders unless it’s for a very tiny bit, I tried it once, the powder clummped and I wasn’t best pleased! After you make the fondant knead it well and let it rest for the colour to develop. You can add more colour later to the made fondant if it isn’t quite the shade you want. Just make a small amount first to see how you get on. Oh, and the recipe isn’t mine, it’s in my International School of Sugar Craft book. Good luck with it if you try it out. x

sorry to butt in but Robert Haynes tells you to use powder, what he said was put your colour on a board & mix it with trex then you have got the right colour to add to your paste, leave it overnight for the colour to develop it does work & you don’t get clumps.

Thanks Bev, interesting information. I’ll it give a try because I never have any luck with powders, it’s great to have lots of different ways of doing this sort of thing. I did a brief sugar craft course some years ago and the teacher always insisted the colour had to be added after the paste was made, that was her way of teaching. I just experiment and if it works for me I go with it. I did stop going, she drove me up the wall!! x
