Cover a red velvet with Fondant

Hi, Im been asked to bake red velvet and cover it using fondant. The reception is at 730pm on 16th Nov, should i assemble the cake earlier on the day before or in the morning of 16th? i was planning to use cream cheese and covered with white chocolate ganache.

Please advise, whether the cake can last long outside if i bake it a day earlier

Hello Hnini07, personally i always like to finish the cake the day before, just in case you have a problem. the red velvet sponge should be good for a week after baking, and cream cheese frosting will last for a few days once mixed, so the decision is really up to you.

Hello Trevorcrawford, i will just go with the redvelvet, bake it for a few days early and freeze before cover it with fondant.
