Hi Christine

To make a dairy free rich fruit cake follow the recipe as written and substitute the butter with hard block margarine or any other non dairy spread instead. To prevent the fruit from sinking, wash it well until all the sticky coating is removed. Dry the fruit ( I use my salad spinner), then lay it out on absorbent kitchen paper preferable overnight. Before adding to the cake batter toss the fruit into some plain flour and coat it very well, this will help the fruit from sinking to the bottom.
