dried egg whites

Hi

I’m intending to make some royal icing using Squires dried egg whites, and I’ve followed the directions on the packet, but the mixture is thick and foamy, nothing like normal fresh egg whites, is this how it should be?

I made up this mixture a few hours ago, and it’s never really altered.

Hi Sharon, I use Dr Oeker dried egg whites and it also remains frothy but makes up just fine. Royal icing made with dried whites is not as strong as that which is made with egg whites, but I’ve never used the Squire’s kitchen brand  so don’t know how hard that sets. You could leave your’s overnight and see how it looks the next day, however, it should be ok.

I’ve just used it, and it does seem ok, and I agree about the fresh egg white, easier to do as well, but my daughter is pregnant, so thought the dried would be a bit safer 🙂
