Fondant inquiry

Dear Paul,
I have recently moved to a very humid city. We are near the sea, it’s really hot and fondant cakes melt. Is there a particular brand of fondant that I could order or is there something that I could mix into satin ice. Kindly advice. I do remember you mentioning a fondant brand for humid hot countries but I can’t find it.

Hi Mona

Carmas Massa Ticino Tropic is the fondant which has been formulated for hot humid countries. Feed back from many professionals and home bakers has been great for this product. Google it by name to see suppliers in your own country.

EDIT: Try adding a little tylose or gum tragacanth to the satin ice to help firm it up. You’ll need 1 teaspoon to 500g and no more. Knead it in and let it rest for a couple of hours. This will help the gum to activate and strengthen the paste. If you add more than a teaspoon the fondant will turn into gumpaste so please don’t add more.
