freezer cake

I will be making truffles from a cake that I made in August and freezed , I want to know is it ok to make truffles today and use them tomorrow. I am concerned since it will be for kids party do just wanted to confirm

Yes that’s fine Neha, just keep them refrigerated and bring to room temperature about an hour before you need the truffles. Any leftovers will be fine for two or three days refrigerated in an airtight container but can not be re frozen.

One more thing Paul used Galaxy chocolate , what’s the method to melt it . Am I suppose to microwave it or melt in pan? I tried doing it once but it become stringy rather than melted

Break it up into squares, place in a plastic bowl and microwave on medium heat for 30 seconds, stir to distribute the heat. Heat, stir, when it starts to melt reduce down to 20 seconds then ten seconds. If it’s melting quickly reduce the heat to low or defrost. Stirring is very important so the choco doesn’t burn.
Do it gently and it won’t go wrong. It takes a while to melt a whole bar, take your time. Your choc probably burned last time or you may have got some water into it.
