Yes you can in the same way as you would dark ganache. If you have quite a lot left over, divide it up in smaller quantities and place in double lined freezer bags and store in an airtight container before freezing. To defrost, take out the amount require and defrost overnight on the kitchen counter. You may still need to soften it gently in the microwave. If you do, heat at 10 seconds intervals on the medium heat. Mix after each heating and reduce the time. Alternatively, place ganache in a bowl and set it over a saucepan of hot water. Don’t let the water touch the bowl. The heat of the water will warm the ganache up gently. Don’t allow any steam to enter the bowl or touch the chocolate.
