Fresh cream on cupcakes

Hi Everyone
we have been asked to make some cupcakes for a wedding but the groom doesnt like buttercream so they have asked for fresh cream, it is in April and we are concerned about them being left out all day can anyone advise

I’m afraid fresh cream can’t be left unrefrigerated for a whole day. If it’s a cool environment an hour or perhaps two hours is tops, unless the venue can supply a refrigerated display unit. You could do white chocolate ganache cupcakes which can be left out all day long. The ganache can have any flavour the groom likes. How about suggesting it? Fresh cream is too much of a risk.
