Can fondant cake be frozen before pick up

Hi 36991

I wouldn’t recommend it! As the cake starts to defrost the sugarpaste will begin to soften and melt, decorations and colours will also be spoiled.

I too would be a bit scared to risk it, but I’ve spoken to someone who does freeze the decorated cake. It’s put in a cake box, in the freezer, then left in the box to defrost, exactly as it is. Might do an experiment one day lol.
My sugarcraft teacher does freeze blocks of sugarpaste though, and says it freezes well, again, I’ve not tried it, but I always freeze my flower paste.

I have frozen decorated cakes before and have not experienced any problems with it, however, I do not put flowers etc. on just in case the colours run!
