Ganache and covered in sugarpaste

Hi. I have 2 questios
1 should i make my ganache the dday before using if so should i. Keep in fridge or leave out overnight.
2 once set im covering in sugarpaste, will the cake ok left at room temp.?

Its a wedding cake for my daughter and we are going to the venue the day before so the cake will be going the day before so wondering once made how long will. It keep at room temp .
My idea is to have it ready to travel thurday wedding is on friday.

Any advice is really appreciated on what day to ganache and cover and stack ready to travel thursday cut amd eat on day of wedding friday.

Hi Lynn bainbridge

It’s best to refrigerate the ganache once made. It will be fairly set the following day and will need to be brought back to working temperature. Microwave it gently on low power, at first for 30 seconds, stir, and continue each time, reducing the length of time it is heated, and stirring in between heating to prevent it burning.

The cakes can be covered and decorated 2 – 3 days before the wedding. Store them in a cool place in your home away from direct sources of heat eg radiators and sunlight. Please see the following link for more information:
