Hi Gucci 906, if you look on the free tutorials you’ll see the lesson on the quantities for ganache. Paul uses 2lbs of chocolate (500gms=1 lb) to a ratio of 1 pint of double cream (568mls). You can now work out how much you need for the quantity required for the guitar cake. Please check my conversion by googling or check on your measuring equipment as I very often make mistakes on measures. Hope this helps you, happy baking.

For example in the LV handbag tutorial it says you will need to use all the ganache but there is no quantities on that tutorial. So does 1pint of cram to 2lb chocolate = 1.5 kilos of ganache?? Or more?? Confused.com!!

For 1.5 Kg of ganache its approx 1.5 pints cream to 3 lbs chocolate.  Not exact but the 1.5 Kg measure all really depends on how thick you prefer to layer the ganache.

Hope this helps.

Kind regards, David

I do a 1:1 for dark choc ganache so 1.5kg of choc I would use 1.5 of cream
