hi all,
just wondering once the cake is covered in ganache an ive finished with the cake for today, do i keep the cake in fridge overnight or on the kitchen worktop ?

I would put it in the fridge overnight. When you go to put on the fondant, take it out and I usually go over it with a brush to remove any excess moisture.
