Ganache teddy

Hi fellow bakers,

Just a Q in the intestest of time saving, I’m making the teddy bear cake for a friends baby shower which is on a Saturday afternoon. I’m baking the cake during the week prior & keeping it in the refrigerator & was planning to stay up after work on Friday completing teddy. However was wondering if I could perhaps carve teddy and stack & ganache on a thursday night & refrigerate & then on Friday apply the hot water & ganache etc…? Or is it best to do it all on the Friday night?

Hi Meeraben

That is what I usually do. I don’t have the fridge too cold because thick ganache can sometimes crack, particularly if it has a very high coco content. I use 70% and have the fridge setting on 4, that works for me, with the cake on the small board and boxed.
