Hi, I've a dude about colouring white ganache. What kind of colouring i can use? Dust, gel,paste?

Hi Alexandrambm

Personally I would use powders because they are more intense and require less colour. Avoid using anything water based as it can make ganache grainy. I've included this link http://cupcakedarling.wordpress.com/2011/07/22/pink-chocolate-ganache/ which shows how to add gel colours to white ganache. If you have oil based colours they would be better, less risk of de-stabalising the ganache emulsion. If using powders, read the label to make sure it is for consumption. some powders are for decoration only and can not be used in food which is to be eaten. Hope this helps.
