Hi all.. i’ve made Pauls famous chocolate cake quite a few times and love it.. but i’m wondering whether it is considered a mud cake or not? I’m assuming it is, since you melt chocolate and add to the mix.. but not sure what to tell clients in case i’m not right.. any help would be much appreciated 🙂

I have two chocolate cake recipes I use, one is called chocolate fudge cake (it’s a wedding cake recipe) which is melted chocolate, sour cream, eggs, added to all dry ingredient a lot of sugar in it, and another one which is Lundy smiths chocolate cake, you add melted choc to the butter and sugar once creamed with the egg yolks then add whisked egg whites. I would call Paul’s, rich chocolate cake or moist chocolate cake or choc fudge cake, just tell them it’s got real chocolate in it, as I give customers a choice between choc flavoured sponge which is just coco added in place of some of the flour and then some baking powder. Choc fudge as a sweet chocolatey cake or rich chocolate which is less sweet.

I would not class Paul’s moist chocolate cake as a mud cake. I always associate mud cake to be the type made with lots of cocoa powder and buttermilk, like the Hershey recipe. Paul’s recipe is much finer and more elegant. I would say it was more chocolate fudge. See Jane Hornby’s similar recipe here:

OOps!! I’ve been calling Paul’s choc cake Chocolate Mud Cake too and I’ve had so many comments on it and now am being asked for ‘your mud cake’. Does it matter commercially if we call it the wrong thing?

I would say not Goldengoose, chocolate cake is chocolate cake, they wont know the difference. I will have to try his recipe, it looks so yummy when ever is see it in the tutorials, its very similar to the chocolate fudge cake recipe I use.

The recipe is like planet mud cake so on my mind yes it’s mud cake x
