What ratio of double cream to chocolate do I use to make 800g of ganache.Thanks.

Paul use 1 pint of cream to 2 pounds of chocolate which translate 3 parts chocolate to 2 parts cream. In metric that is 200mls cream 300 g chocolate. For 800g ganache it will be 480g chocolate to 320ml double cream. I make mine 2 parts chocolate and 1 part cream and find that works fine. For white ganache I use 3 parts chocolate and 1 part cream, for milk chocolate I just add extra chocolate as per dark ganache until I get the consistency I want or use ratio for white chocolate proportions.
