Left over cake batter

Hello all
I have just seen vanilla cake batter in the fridge section in my local supermarket. I was just wondering whether any home made left over cake batter can be stored in the fridge until the following day? I have never done this before as I have usually made cupcakes out of any left overs.

Hi Scarlett

I’ve kept batter on the worktop for 35 minutes and to my surprise it rose higher than the freshly made! You can only but try. Normally I’d say no if it has baking powder as it will have fizzed out. Have a go with your left over batter and see what happens. x
