Mrs Jones fruit cake gluten free

i want to make a fruit cake using Mrs Jones recipe but has to be gluten free. If i replace the plain flour with gluten free flour, will that be ok and has anyone else tried it?

I should think it will be ok but you might need to add a teaspoon of xanthan gum to the flour to keep the crumb soft. There are so many wonderful gluten free fruit cake recipes online, I just wondered whether you’ve had a look at a few of them. My personal preferences are from Delicious magazine, Dove Farms and Phil Vickery. However there are plenty more, to see them just google ‘gluten free rich fruit Christmas cake’. Compare some of those recipes with Mrs Jones’ ingredients, you may not have to make any changes apart from the flour. Hope this helps.

I’ve tried several different gluten free recipes but always come back to Phil Vickery’s fruit cake – it’s so moist and rich, and no one yet has been able to tell the difference from a normal wheat version.
