Mrs Jones sponge – cake o meter & huddle cake

Hello, I am new to the site and for my first attempt I am planning to do the sports huddle cake for my friends little boys 8th birthday (3 weeks to go and counting!). I have read several posts regarding the occasional sinking of the Chocco cake so I have decided to do Mrs Jones sponge with buttercream and white ganache coating on the outside prior to applying the sugarpaste covering.
Will Mrs Jones cake be okay for the huddle cake ie for carving etc? I am assuming that I can freeze this overnight prior to applying white chocolate ganache?
I am trying to downscale Mrs Jones recipe using the cake-o-meter, however I know that Mrs Jones recipe is for a 10 inch round tin however I do not know the height of her tin to correctly convert. Please help!

Mrs Jones’ tin looks like a British standard 3″ deep cake tin, I have the same tins. The sponge is very light and moist, if you’d like to put in the search box ‘huddle cake’ it should take you to several answers, one is related to the sponge cake. I hope this helps.
