Mrs Jones vanilla sponge cake

Hi all

I have read numerous questions and responses about Mrs Jones vanilla sponge cake so forgive me if this has already been covered. I would like to make it as a 10″ square with 3 layers, is it best to scale up the original receipe and bake in 3 it in tins. I use the CakeOmeter app for scaling recipes so if the original recipe divides into 2 tins what would I use as my original tin size. As an example, if I put the original tin size as 10″ round it tells me to scale up by 1.3 but that will only give me the quantity for one 10″ square. Hope that makes sense 🙂

Hi Jude3011

To get the extra layer, increase your calculated quantity by multiplying it by a factor of 1.5 . This will give you sufficient mixture for 3 x 10″ square layers.
