Hi amrashak,

You could try using lemon juice, perhaps try a little test piece of sugarpaste (fondant) first? Use it very sparingly, otherwise it will dissolve the sugarpaste. Otherwise, you could try mixing with a tiny amount of piping gel, but I’m not sure if that would dry out properly or look streaky.

Alcohol is the best solution as all the alcohol evaporates from the cake, but if you don’t have some to hand, or don’t want to use alcohol for personal or religious reasons, I think the lemon juice might be the best alternative.

Hope that helps!

Hi amrashak

You can use pure lemon extract instead of alcohol but it does contain alcohol as does confectioners glaze. Here http://www.cakeflix.com/questions/confectionary-glaze you will find more information on confectioners glaze and how it is made. Commercially produced piping gel I believe also contains alcohol, however, the alcohol in all these products evaporates very quickly and has no intoxicating properties. Here is a home made recipe for piping gel http://sumarowjee.blogspot.co.uk/2010/03/home-made-piping-gel-recipe.html, it does use some water which if used excessively may cause the fondant to become sticky. Melted coco butter can be used for painting on fondant but you’d have to use oil based colours as coco butter will not blend in water based colours. Squire’s kitchen sell packs of coco butter, they may have some instructions on it’s uses. Hope this helps.
