Can you use plain caster sugar instead of golden caster sugar.

There’s no reason why you can’t do that. I’ve used it and have also substituted with brown sugar. there are many hints and tips for this recipe in ‘Paul’s moist chocolate cake’ which you can see in popular questions and also in ‘Paul’s chocolate cake – timings’. Hope this helps.
