recipe for fruit cake

hi does anyone have a good fruit cake recipe I havent yet attempted one and I have a wedding cake to do in a few months thanks arlene

Hi Arlene, if you’re making a wedding cake you need to find out whether your customer wants rich fruit cake or light fruit cake. They’re a bit different in that rich fruit cakes, because of their high fruit content, need to be matured for three months to make them really fruity and moist. Light fruit cakes in my experience don’t need as much maturing because there is less fruit content. There are many fruit cake recipes online but, I particularly like Jane Hornby’s which can be found by either googling her name or, on the BBC food site. Fiona Cairns (she of Royal wedding cake fame), has a lovely fruit cake in which she has used tamarind, it’s some thing a bit different and some people like unusual recipes. There are so many to choose from, the best thing to do is select some which take your fancy and make them up to sample. Don’t forget though you have to start baking well ahead of time and also consider whether you will be feeding the cake with brandy or another liquer or not at all.
