Santas face

Hi
I have made a 10″ rich fruit cake for Xmas. I would like to make the Santas face from Paul’s Xmas book.
I’m hoping i will be able to carve the fruit cake ok but don’t really want to use ganache to stick the pieces together.
Is there another way I can stick the pieces together. I’m then thinking of covering with marzipan and then decorating it.
We usually eat the cake for about a month after so it would need to be something that doesn’t go off.

Hi, I don’t actually know which Santa face you mean but if you’re on about sticking pieces of fruit cake together would it be better to use apricot jam? That’s the only thing I could think of.

As donnascakes has mentioned apricot jam is the best thing to use when sticking pieces of fruit cake together.
The jam must be boiled first, it you boil it in a little alcohol all the better, this is to prevent any mold forming on the jam.
