Do you weigh eggs with or without shells for recipes?

Hi Maggie
Recipes formulated for British bakers is with shells. However, if you’re following recipes from French patisserie books, it will most likely ask for without shells. 🙂

Thanks for the advice. Just that madeira is calculated wkth a point.eg 3.1. Do you round up/ down ingredients in this case?

Anything under .5 is down and anything above .5 and over is round up.
