Soaked Fruit

Hi All,
I’ve had some fruit soaking in my best Barbados Rum since the beginning of January 14, (yes I forgot about it), do you think it will be still okay to use ? Or should I re soak in brandy and drink the rum myself? I know which one I’d prefer but any answers will be welcomed.

Hi Donna,
I have just made a cake with fruit that has been soaking in a mixture of rum and other alcohol since February 2013!
It turned out fine (and very boozy) and has been given the thumbs up by tasters!
Go for it and good luck..( you could always keep back some of the rum to celebrate when you’ve baked the cake!)

And I have fruit soaking since July 2013 which will be used for this year’s Easter simnel cakes. You can drain some of the rum off and drizzle it over your lovely cake when it comes out of the oven.

Marvellous. I shall get cracking on the baking then. I was more upset about wasting rum !!
