Stacking a cake

Hi
I am making a practice wedding cake.
Its the first time that I have stacked a cake.
Do you have to wait overnight for the cakes to dry before stacking them?

I have just tried to get the 8″ newly covered cake off the cake board to put onto the 10″ layer.It seems reluctant to leave the board.
Would it be easier if I waited until it dried ?

Hi Rachael

I usually wait until the icing is dry and then release the small board by sliding a warm pallet knife under it. You should be able get enough of the knife in to lift and unstick. Put the dowels in on fresh icing otherwise it will crack once dry.
