stadium cake, sturdy chocolate cake recipe

hi, i am making a football stadium in a months time, does any one have a sturdy chocolate cake recipe for this or any advice of any hurdles to watch out for when making it ? i was thinking of doing a chocolate pound cake

Hi Annabel, check out Jane Hornby’s chocolate wedding cake recipe on BBC food, just google in her name and you’ll get it. The wedding cake recipe is all butter all chocolate and it is to die for. The recipe must be followed exactly to include timing. When I bake this I allow an extra 5 or ten minutes more just to make sure for doneness. Advisable to make a small one first to taste since it can be a bit expensive on ingredients. You can get 200gm bars of high quality chocolate for 99 pence in Lidles, Aldi have similar too. This is a wonderful sturdy cake which is moist but easy to carve and shape.

can i know how long is the shelf life of the cake if we covered it with marzipan and fondant at asian room temperature?

I made this cake ten days ago and have just thrown out a small piece. My cake did not have fondant or marzipan but my house is cool. I wouldn’t chance it beyond a week in a warm environment. This cake is very rich and I’m wondering whether marzipan and icing would be too much??? You could ganache and ice???? jut a suggestion.
How long before you need to bake and decorate?

im making for a wedding cake..im not sure which types of chocolate cake suitable for the weather and event..The cake must at least 1 week( for the whole process of baking until reach customer)

or do u have any suggestion for the cake?
i need to cover it with fondant and marzipan..

Hi Nani

From your reference to the weather I am assuming you are overseas and the climate is hot?? If that is the case, it might be worth while to bake the cake and freeze until you are ready to decorate. I have to admit chocolate cake would be a nightmare in very hot temps, but it can be done providing you kept the decorated cake in an air conditioned room. I have read that cakes decorated with Satin Ice fondant can be placed in the fridge, this may be an option although I have no experience of refrigerating an iced cake. Perhaps other members could throw some light?
