Sugar pearls

I have an order for a 4 tier round cake- 10,8,6,4. The bride has requested each tier be covered with sugar pearls. I have made some pearls and dusted them with pearl lustre and they look very pretty but are obviously not all exactly the same size as I haven’t used the pasta machine/icing tip method, they are pretty close though so do you think anyone will notice? The cake is pale pink so it’s not as if they will be standing out against a dark background. I was wondering if anyone out there has used the shop bought pearls and if so, what are your opinions? I know they will all be uniform in size, but I am a bit worried that someone might breaka tooth on them as I imagine they are
like little bullets! Thanks

Hi Kmmein

If you’ve ever looked at pearls in nature you’ll see that they are not uniform. Your hand made pearls will look a lot more natural than the commerically made little bullets! I don’t know about anyone else, but if I cover a cake with lots of pearls I make my own either with sugarpaste, modelling chocolate or piped tempered chocolate. I’ve also been know to lustre up yogurt covered fruits and nuts with customer approval. You can also buy commercially made chocolate pearls. To see suppliers just google:
‘chocolate pearls for cake decorating’. They come in lots of different colours too.
