Welcome to the Cake Decorators Q&A
teddy bear cake recipe
I think Paul made the teddy from a toffee cake. He has not given a recipe but if you put in the search box ‘toffee cake’ you will see many answers and also a recipe donated by one of the members. You need to look at the question with the most answers. If you want to access the moist chocolate cake recipe you can find that in the free/beginners tutorial library.
The toffee recipe isn’t one that we can give away.
The cake can be made equally well using moist chocolate cake of vanilla sponge both of which we have recipes to on the site.
Good luck with the cake.
would i use the full moist chocolate cake recipe and would it be better to use royal icing or buttercream for the topping?
I think royal icing is mainly used for covering fruit cakes, over a layer of marzipan, but for the chocolate cake, you could cover it with either buttercream or chocolate ganache, then if you smoothed this off, as Paul does in the videos, you could then add a covering of sugarpaste/fondant, if you want.
okay thanks ill cover it with ganche to crumb coat, then fondant, then buttercream
