I was just wondering how paul managed for the sugarpaste not to dry out or crack on the dog as the sculpturing did take some time.

Paul suggests using a little trex or water, preferable trex to prevent the sugarpaste drying out. Hear him in this lesson http://www.cakeflix.com/westie-terrier-dog-lesson-5-icing-the-dog#ingredients as he is sculpting and texturizing the dog.
