Hi Alicain

It depends how sturdy you want the roof to be. Using straws would not be stable as anything placed on the top of them would cause a collapse. What you could do is drill slots into the corners of a cake board, just deep enough to insert in long plastic cake dowels for the corner posts. You’d need to hot glue gun them into the slots to make them steady. So if you can imagine, it will look like table.

On this platform you could make a cardboard roof using old cake box material or some corrugated card. Pipe the roof with royal icing to make the straw. Other mediums which could be used is extruded fondant or shredded wafer paper. It’s easy to colour wafer paper by rubbing a small amount of trex over it’s surface and colouring it with powdered food colour. Use a soft round brush to maximise the colour distribution.

If you didn’t want to make a cardboard roof, pipe a thick raised line of royal icing to form a a baton down the centre of the cake board. The ‘straw’ can cascade down vertically from the baton to create the illusion of the roof. Once dry, as long as the ‘roof’ is not too heavy, it can be inserted directly into the cake.

As you haven’t mentioned the size of the cake or how big you would want the bar roof to be, I am unable to give the size of card you need to form the roof.

Hope some of the suggestions help, even if enough to give you some ideas of your own. You could even make a cone shaped roof with card board and just have a centre support. It sounds like a lot of work but in reality it isn’t providing it is not too big or heavy.

I think a 4” card should be enough. By the time it has been decorated with the straw it will look fuller.
Try the size out with some scraps of card board before committing to the final size. I hope it works out for you. I would love to know how you get on. X
