toffee sauce

Hi, I make my own toffee sauce for my cakes but find that after a while in the fridge it crystalises. I would love to know why and how to keep it smooth if possible. Can anyone help please? Thank you!

Try adding a teaspoon of lemon juice in the finished sauce, that should help the crystalization problem.
