two tier cake

hi iam making a two tier birthday cake will mrs jones 10″ recipe be ok will it be dense enough to hold the second tier or does anybody have another recipe thats not chocolate

Mrs Jones vanilla sponge will stack perfectly well, the only thing I have a slight reservation about is the weight of the fondant icing. The cake is really soft and I don’t know whether it would be dense enough to take that weight.
This http://www.bbcgoodfood.com/recipes/10860/easy-vanilla-cake is a really lovely recipe too I’ve bake it lots of times and it never fails. Other members may have more experience with Mrs Jones’ recipe with fondant, but the cake it’s self is absolutely lovely filled and ganached, which is the way I do it.

Hi Susan

I have never made Mrs Jones cake so I can’t advise you, but I have used a recipe for a high-density sponge cake that never fails, it’s perfect for carving and it uses the all-in-one method which is even better. This is a recipe for a 10” round cake.

500g sr flour, 570g sugar, 500g butter or marg, 75ml cold water 500g eggs without shells. 160 fan until cooked.
