vanilla sponge cake recipe!

Hi everyone, i was just wondering if anyone had a good vanilla sponge recipe for 2x8inch cakes? i usually do 8oz flour, sugar, marg, 4eggs, 1teaspoon vanilla extract, it is very light and tastes ok but it always turns a really dark yellow and was hoping for tips on how to make a good light sponge thats light in colour? sorry. thanks xx

Hello Chelsea to make a light fluffy sponge I usually use 4 eggs weigh them and whatever they weigh add the Same amount sugar and butter / or marg and half teaspoon of good quality vanilla extract so if the eggs weigh 200g add 200 sug 200 marg it comes out quite light yellow color

Hi Chelsea

I always cream the sugar and butter for ten minutes and the mixture becomes very white. I also add beaten eggs one at a time followed by a table spoonful of the flour, then gently fold in the remaining flour with a large metal spoon. The eggs will always make the sponge slightly yellow, can’t really avoid that. Have you thought of trying a Genoise sponge recipe? I think that gives a lighter coloured sponge.
